Spinach walnut pesto pasta.  Great alternative for the winter.

ECO Recipe of the Week

 Spinach walnut pesto pasta

Pesto sauce

2 cups of fresh spinach

1/3 cup chopped walnuts or pine nuts

1 to 2 garlic cloves, chopped

1/2 cup olive oil

1/3 cup soy sauce or nutritional yeast

1 teaspoon lemon juice 

salt and pepper, to taste

4 ounces of dry pasta, whole wheat is recommended


Blend all ingredients in a food mixer and pulse until ingredients are blended into a thick sauce.  Add to cooked pasta and serve.

If desired, top with plant-based Parmesan cheese. 

Serves 2
