ECO Recipe of the Week

BLUEBERRY KUCHEN 






 

CRUST

  • 1 cup all-purpose flour

  • 2 tablespoons sugar

  • 1/8 teaspoon salt

  • 1/2 cup plant-based butter, softened

  • 1 tablespoon white vinegar

Mix all the above ingredients together, and press into a pie plate with floured hands.

MIXTURE

  • 2 cups fresh blueberries for mixture and 1 cup of fresh blueberries for topping

  • 2 tablespoon all-purpose flour

  • 2/3 cup sugar

  • 1/8 teaspoon cinnamon

Mix together the above ingredients, except for 1 cup of blueberries.

Bake at 350 degrees F for 50 - 60 minutes until blueberries are cooked.  Remove from oven.  Add remaining 1 cup of fresh blueberries.

This recipe is an old family favourite.
